Tim Evans
To make the classes even more unique and highly social, they are hosted in the designer kitchens of exclusive homes in the Vancouver area. Classes are $125 per person, and fill up fast! To find out more and to purchase tickets call 604.687.5315, ext. 248 or email specialevents@artsclub.com.
Quang Dang returns to the series to prepare the elegant, regional cuisine he serves at West Restaurant. The series continues with Bruno Feldeisen from YEW restaurant + bar. Bruno is equally at home preparing savoury and sweet treats – he recently competed in season three of the Food Network’s Sweet Genius.
Tim Evans opens the series next month. He is the Executive Chef at Siena Restaurant on the South Granville corridor, tucked in around the corner from the Stanley Industrial Alliance Stage. Tim has been getting rave reviews since the eatery opened last year. Tim Pawsey of the Vancouver Courier writes, “Siena is lusty, rustic, bare tabled and boisterous. It also brings some much needed Italian and Spanish tastes to the area.” [Read more reviews].
Originally from England, Tim Evans has worked in Michelin starred restaurants in both London and Edinburgh. Tim moved to Vancouver nearly 10 years ago to work at CinCin. He was instrumental in opening Siena in 2012, and participated in a spring cooking class for us. To get you into the mood, Chef Tim has kindly shared with us a quick and simple recipe for one of his signature desserts at Siena, his contemporary take on the classic chocolate brownie.
Siena’s Chocolate Brownie
Serves 4
1/2 cup unsalted butter
1 cup sugar
2 large eggs
1/3 cup cocoa powder
1/2 cup flour
Pinch of salt
1/4 tsp baking powder
1/2 vanilla bean, scraped
- Pre-heat oven to 350F
- Melt butter in pot, and remove from heat
- Add sugar and vanilla, whisk to incorporate
- Whisk in eggs
- Mix in cocoa powder
- Whisk in flour, baking powder, and salt
- Grease a shallow 5″ by 9″ pan, and line with parchment
- Bake for 15 minutes, then rotate pan, and bake for a further 10 minutes
- Bake in 5 minute increments until done
Brownie should be moist and fudgy. Serve warm with vanilla ice cream.
